Easy Vegetable Soup

The month of January is National Soup Month.  Since January is starting off just like December ended, with tons of rain and chillier weather, its continued soups, slow-cooker recipes, and comfort food continued at our house :) 

It's easy to enjoy a pot of soup any night if you let your slow cooker do the work.My go-to slow cooker is usually a chicken noodle, but I decided to try a new one that is extremely simple. I am the opposite of many moms and don't always have a stash of frozen veggies. You can certainly do that or just add in the cut up fresh stuff. Here's a recipe for Easy Vegetable Soup.


  • 2 whole potatoes, diced
  • Diced onions, if desired
  • 1 bag frozen mixed vegetables
  • 1 large can diced tomatoes
  • 1 large can tomato soup
  • 2 cups water
  • Seasoning to taste
  • Egg noodles or other pasta, if desired

Spray inside of slow cooker with non-stick cooking spray. Add diced potatoes. Add diced onions, if desired. Add frozen vegetables and diced tomatoes. Mix tomato soup and water with wire whisk until smooth and pour over ingredients. Add seasoning to taste. 

Cook on low for 8-10 hours or on high for 4-5 hours. Add egg noodles or other pasta during the last 30 minutes. Serve with cheese toast or grilled cheese sandwiches for an easy family dinner.

**For a quicker prep time, omit the potatoes and onions and add additional frozen vegetables.
